Vegan Omelets

I used a great recipe from fatfreevegan.com, one of my favorite blogs this week. It resulted in some tasty omelets.

For the innards I took one container white button mushrooms, one drained can black beans, and one bag of spinach. I heated them up in some olive oil and then added some fajita spices as well. This was what I used as innards in my omelet, though I also had some leftovers that I put in some tupperware over rice that make a nice roll up burrito as leftovers.photo 1

The omelets were tasty, though nothing like what I remember omelets tasting like. The veganaut actually commented how good they were but that they tasted more like falafel than omelets (probably cause their base was chickpea flour.

The most fun was deciding what to top them with. I used avocado and BBQ sauce on mine. The veganaut used salsa and chipotle garnish on his.
