I used a great recipe from fatfreevegan.com, one of my favorite blogs this week. It resulted in some tasty omelets.
For the innards I took one container white button mushrooms, one drained can black beans, and one bag of spinach. I heated them up in some olive oil and then added some fajita spices as well. This was what I used as innards in my omelet, though I also had some leftovers that I put in some tupperware over rice that make a nice roll up burrito as leftovers.
The omelets were tasty, though nothing like what I remember omelets tasting like. The veganaut actually commented how good they were but that they tasted more like falafel than omelets (probably cause their base was chickpea flour.
