Vegan Appetizers: Falafel and Mac and Cheese Bites

Made lots of vegan appetizers for that party we co-hosted the other night. But one of my favorites was simple falafel balls mixed with edamame, fried in the fryer of course. Another one that I will share the recipe for here was for mac and cheese bites.

I was sadly a little disappointed by the mac and cheese bites. They stuck to the paper cups and were not as tasty as my usual recipe for mac and cheese. But here is the recipe for these if you are interested in modifying it and trying it yourself as an appetizer sometime!
Ingredients:

  • 1 box cooked macaroni
  • 1 bag daiya mozzarella
  • 1/2 bag daiya cheddar
  • 1TBsp margarine
  • 1 container silken tofu
  • 1/2 cup almond milk
  • 2TBsp nutritional yeast
  • 1TBsp cornstarch
  • 1tsp salt

Cook the macaroni like usual. In a blender mix together the cheddar, margarine, silken tofu, almond milk, nutritional yeast, salt and cornstarch until liquidy. When the macaroni is done put it in a large bowl and mix in the daiya mozzarella as well as the liquidy tofu mixture. Scoop out in to cupcake liners. Top with bread crumbs and bake at 375 for 30 minutes.

These are the falafel and edamame balls- so tasty, esp when served with chipotle garnish.
