I came across a recipe this week that was non-vegan using Pillsbury Crescent Rolls to make cookies. And what do you know, those rolls happen to be vegan, so like a good vegan I veganized the hell out of this recipe!
- two containers of pillsbury crescent rolls (or TJs, I recently found out these are vegan too)
- 1 container of vegan cream cheese
- 1 tsp vanilla
- 1/2 cup sugar
- vegan chips of any sort (I used a mixture of chocolate chips as well as white chocolate chips and butterscotch flavored chips, the latter two of which I bought on veganessentials.com)
Whisk together the vanilla, cream cheese, and sugar. Spread this mixture on the crescent rolls.
Sprinkle your variety of chips on this.
Roll up the rectangles and wrap in plastic wrap. Place in the fridge for at least 2 hours.
Remove from the fridge and slice in to 1 inch thick rolls. Place flat side on a baking sheet and bake at 350 for 10-12 minutes. Enjoy!
