Sometimes I buy things just cause they’re vegan…yeah, it’s a bad habit. In particular, I bought these vegan fishless sticks a couple months ago and then left them in the freezer forever, forgetting I had them and not knowing what to do to incorporate them in to a dish. But other leftovers led to inspiration.
I basically cooked them according to the package, but then sliced up some left over tomatoes as well as placed some spinach and those tomato slices on a leftover hoagie roll from the week prior, and topped that with the fishless sticks and sriracha vegan mayo. It was super simple and light, a perfect lunch!
