Vegan Mexican Stuffed Calzones

I really never tire of calzones, pizzas, and tacos. They are truly my favorite things to make. I threw this giant calzone together last minute after a long work week and it was delicious!


  • 1 bag frozen corn
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 container vegan beyond meat chicken strips
  • 3 TBsp taco seasoning
  • 1 chopped avocado
  • 1 package vegan pizza dough
  • 1 cup marinara sauce
  • 1/2 package pepperjack daiya cheese
  • 1/2 package daiya mozzarella

Basically you will want to fry up the corn, tomatoes, black beans, and vegan chicken in some olive oil. Stir in the taco seasoning at the last minute and remove from heat.

Roll out your pizza dough as if you were going to make a pizza. On one half spread the marinara. Then top with the Mexican mixture. Then the sliced avocado. Then the cheese. Lastly take the empty half and pull up and over on top of the full half, and squeeze the ends together. Cut some holes in the top. Cook at 500 for 15-20 minutes. Enjoy! I served it with some of the leftover yogurt and feta mixture I had from the kale and corn quesadillas I made last week.
