Vegan Chiptole Seitan Breakfast Hash

Another super simple breakfast hash to make for your week. 

Ingredients:

  • 1 bag diced fingerling potatoesphoto 1
  • 2 boxed of chipotle seasoned seitan strips
  • 1 tsp curry powder
  • 1 TBsp oregano
  • 1 TBsp cilantro
  • 1 bag vegan festive cheese mix
  • 1 can diced green chiles
  • olive oil
  • 2 TBsp chopped green onions

Fry up the potatoes in the olive oil. Once browned add the seitan strips, green chiles, green onion, and spices. Stir in for another 4-5 minutes, then add the cheese mixture and stir until melted in, about 2 minutes. Remove from heat. I packaged these up and served on toast with hot sauce for a quick and easy breakfast!
