So this is the last part of my three part post. Remember those amazing quesadillas from yesterday? Well unless you made over a dozen quesadillas you probably have a lot of the kale and corn mixture leftover. Don’t worry, we can fix that. Just slice up a container of vegan bacon slices, stir them in, and serve with the incredible creamy sauce I made for topping the bacon and brussels sprouts quesadillas a week ago.
