Vegan Fall Harvest Tofu Scramble

The truth is this recipe was one I threw together to use some leftovers from the grilled cheese sandwiches I made the night before, but it ended up being a nice fall morning treat!


  • 4 red potatoes diced
  • 2 granny smith apples diced
  • 4 tomatoes diced
  • 1 package firm tofu crumbled
  • 1 package thinly sliced tofurkey slicesphoto 3
  • 1 package chopped vegan bacon
  • walnut oil
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp cayenne pepper
  • 1/2 bag daiya mozzarella
  • 1/2 bag daiya pepperjack

First heat the potatoes in the walnut oil until browned in a large skillet. Then add the apples, tomatoes, tofu, tofurkey, and vegan bacon. Stir and heat. Next add the spices and mix in. Lastly add the vegan cheese and serve melted. Very wholesome.
