I had been wanting to make this sandwich for a little bit of time, and it worked out well (well sadly for the Veganaut that is) that the Veganaut got sick this week, and we all know that soup and grilled cheese is a perfect meal for the ill.
The soup was nothing special: just this pre-boxed black bean soup from TJs. I topped it with fresh tomatoes, daiya cheddar, and parsley flakes after it was done.
For the grilled cheese:
First spread apple butter on the inside of one slice of bread. Then stack with tofurkey slices, vegan bacon slices, sliced granny smith apples, and lastly daiya cheddar slices. Coat each side of the sandwich with margarine and fry. Delicious and very New England if I do say so.
