What to do with a large shipment of maple syrup and apple butter from Ohio? Time to get creative!
This one’s pretty easy and makes A LOT of cookies, perfect to share at work.
- 1.5 cups Earth Balance margarine
- 4 TBsp energ egg mixed with 10 TBsp water
- 2.5cups sugar
- 6 cups flour
- 4 tsp baking powder
- 2 TBsp vanilla
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup apple butter
First you will want to beat the sugar in to pre-softened margarine. Then add in the vanilla, apple butter and energ egg. Mix the flour, salt, and baking powder together in a separate bowl. Then beat them in to your other mixture with an electric beater.
Next put it in the fridge for at least 4 hours.
Mix together 1 tsp cinnamon and 1/2 cup sugar in a wide bowl after the dough has chilled. Grease a cookie sheet. Roll the dough in to cookie balls and roll through the cinnamon-sugar mixture, then place on the sheet. Bake at 350 for 12 minutes and enjoy all week! (Unless you share with others).
