I guess if you follow someone’s blog you start to realize what some of their favorite things are. So you have probably all guessed that I will never tire of making pizzas, calzones, or tacos. They are such simple and perfectly veganizable dishes that also give you a lot of room for creativity. Plus I find that you can add BBQ sauce or avocados to almost anything and it will probably make them better. So naturally this dish was an easy one that just put me in the right mood.
It’s really a simple recipe as most calzones are. Basically I chopped two green bell peppers and fried them along with 2 boxes of Trader Joe’s vegan chicken strips. I added 1 TBsp oregano and 2 TBsp cilantro after this was mostly cooked. Then I placed these things in a large bowl and mixed in BBQ sauce until it was well coated, probably about 1.5 cups of BBQ sauce.
Then I rolled out TJ’s pizza dough and poured all the chicken mixture in it, then topped it with shredded Daiya Jack Cheese. Wrap up the calzone and put some vent holes in, then cook it at 400 for 25 minutes. Super tasty and simple!
