Simple Vegan Chocolate Covered Fruit Clusters

I went on a camping trip with a friend earlier this summer, and we both brought a large amount of food to the event even though there were just two of us. Naturally I had a lot of leftovers to take home, but most of the goods were non-perishable. This includes two bags of dried fruit, one was banana chips and the other being a mixture of dried mango, pineapple and cranberries from Trader Joe’s. These were sitting in my cupboard for months but I finally made use of them: chocolate covered fruit clusters!

This was actually the recipe my mother and I used when I was young and we made chocolate covered pretzels. But I used a bag of vegan chocolate chips. I also wanted to try white chocolate so found a bag of this from vegan essentials (these are much harder to find vegan than regular chocolate chips). white chips

Basically you pour one bag in a microwaveable bowl, add 1 TBsp crisco, and microwave for 1 minute. Stir, and if not melted keep microwaving for ten seconds at a time until it is liquified. (Do NOT microwave for longer than ten seconds or you might burn the chocolate).

Then pour your pretzels, or in this case dried fruit, in to the bowl and mix. Then use tongs to remove and place on wax paper. Let dry overnight/cool in the fridge!
