Maple Syrup Encrusted Rainbow Brussels Sprouts!

Ok, so this is not really rainbow colored brussels sprouts, but it looked rainbow-ish when completed, hence the title. The Veganaut and I had a large amount of maple syrup shipped from his mother to us this week, so I wanted to make some unique recipes with it. Here is my first!


  • 1 bag shredded brussels sprouts
  • 1 bag of multi colored potatoes, diced (found mine at TJs, it had 4 each of small red, yellow, and purple potatoes)
  • 1/3 cup olive oil
  • 4 TBsp maple syrupphoto 2
  • 4 TBsp apple cider (which we conveniently also had left over and I was able to use up!)
  • 1 TBsp lemon juice
  • 1 tsp red pepper flakes
  • 1/2 tsp salt

First you will want to mix the potatoes and sprouts in a large bowl with the olive oil. Then spread out on a cookie sheet and bake at 425 for 20 minutes, turning once over in the middle. photo 3

Once these are roasted remove them back in to the large bowl. Mix together the maple syrup, apple cider, lemon juice, red pepper, and salt. Use this to coat the veggies. It makes a tasty side dish for a breakfast sandwich or if you are making a main dish with fake meats. I might try to make it again for Thanksgiving this year.
