This folks was a meal that made me feel excessively unhealthy, but I enjoyed every bite. Vegan nachos….mmm…mmm…good!
The recipe I used was insanely simple. First I stir fried up some vegan Trader Joe’s beefless strips with some fajita spices. Then I added a bag of frozen corn and heated that up.
I oiled a cookie sheet and covered it with tortilla chips, then sprinkled the beefless strips all over that, and lastly topped that with a combo of daiya cheese and Teese nacho cheese. I baked all this at 350 for 15 minutes and once it was out of the over topped it with pico de guillo salsa and avocado. Delicious!
