Vegan Lentil Loaf

Doing some reminiscing today: this recipe was the first meal that I made Lilith, and it’s crazy to think of how many meals we have already made together since, plus how many more we will make in our future. This is a recipe I am quite proud of, and the added BBQ sauce as per Lilith’s request was a great addition to the recipe.

Ingredients:

  • 1.5 cups lentils
  • 3.5 cups veggie stock
  • 2 diced yellow onions
  • olive oil
  • 2 cups brown rice (cooked)
  • 2 TBsp garlic
  • 1/2 tsp sage
  • 1/2 tsp salt
  • 1/2 tsp italian seasoning mix
  • 1/3 cup BBQ sauce

First you will want to cook the lentils in the veggie stock, which will take about 30 minutes to be mostly absorbed. Then you will drain the lentils and mash them up quite a bit.

Mix the onions in some olive oil and sautee until soft, then add that with the garlic and lentils, lastly adding the BBQ sauce and spices.

You can then scoop all of this in to a large loaf pan, and topping it with extra BBQ sauce adds for a delicious topping. Bake this at 350 for 1 hour.

I served this meal with a side of sauteed veggies, which were basically a mixture of veggies cooked in an excessive amount of Earth Balance margarine.
