Hummus stuffed mushrooms

I have this continued habit of buying hummus cause it looks good, and then realizing I don’t really eat it or crave it that much when it is home…so then it sits there in the fridge until either I have a party and people come over to eat it for me, or I search for a recipe that will allow me to use it up. This is the latter. And this one let me use up a lot of ingredients.

First in a wok I fried in a small amount of canola oil 2 TBsp garlic, 1 orange bell pepper, and 1 cup frozen corn. Then I added in one package of spinach and wilted it down. Once this was all cooked I added it to a bowl with 1 package of uneaten hummus that had been sitting in my fridge for two weeks (though not yet expired), 1 tsp garlic powder, 2 tsp onion powder, and a little salt.

Then I used this to stuff some stuffing mushrooms. This was then put on a cookie sheet and all the mushrooms were sprinkled with breadcrumbs. Then I baked it all at 375 for 15 minutes. It was a little bland, but a nice way for me to use up my hummus.
